| There is a healthy rivalry between Australia and New Zealand as to the origins of the Pavlova. Australians claim that during a 1926 world tour, the famous Russian ballerina Anna Pavlova performed in a production of "Swan Lake" in Australia. In her honor, a master chef by the name of Herbert Sachse created a dessert which, like the dancer, was light and airy.... And so the Pavlova was born. New Zealanders claim that a recipe was recorded in 1919, long before the ballerina performed in Australia. Whatever the true origins, Anna Pavlova (1881-1931) is forever immortalised and celebrated in this uniquely antipodean dessert, Erica's Kitchen Pavlova has all the features you would expect from a great Aussie icon.
