Pavlova | There is a healthy rivalry between Australia and New Zealand as to the origins of the Pavlova. "Legend" has it that during a 1926 world tour, the famous Russian ballerina Anna Pavlova performed in a production of "Swan Lake" in Australia. In her honor, a master chef created a dessert which, like the dancer, was light and airy.... And so the Pavlova was born.
